Smoked Pancetta & Chorizo Mac & Cheese

Topped with Milgro Original Crispy Onions

What you need:

Ingredients (serves 3-4):

50g smoked pancetta, chopped

50g chorizo, chopped

50g Milgro Original Crispy Onions (more if you fancy!)

400g macaroni pasta (but you can use any kind you have to hand)

600ml of milk

2 tsp of English mustard or Dijon

50g plain flour

50g butter

300g mature cheese, grated (save 50g for topping)

3 garlic cloves, diced

Spring onion for garnish (optional)

What you need to do:

Step 1: Cook your pasta per pack instructions. Drain, rinse and set to one side

Step 2: Place a pan on a medium heat and add 1 tbsp of olive oil. Once warm, add the pancetta, garlic & chorizo. Cook for 4-5 mins and remove from the pan (this will leave this amazing flavoured oil - you want to keep this for cooking other things in!)

Step 3: Add the butter to the pan you cooked your pancetta and chorizo in and return to the hob on a low heat. When the butter starts foaming, add the flour and mustard then cook - whisking constantly - for 2 min.

Step 4: Next add your milk gradually as you whisk, then the grated cheese and continue to whisk for another 2-3 mins on a medium heat until the sauce because becomes thick and smooth.

Step 5: Add the cooked pasta, chorizo and pancetta to your cheese sauce and stir through well.

Step 6: Add the lot to an oven baked dish or skillet pan and top with the rest of your grated cheese. Cook in the oven @180C for 10 mins until the cheese is bubbling and golden, then remove from the oven.

Now...crunch time!

Sprinkle our Milgro Original Crispy Onions on top alongside some fresh spring onions for the ultimate finish!
